Baked Zucchini Chips

Zucchini Chips

  • 2 zucchinis (sliced at about 1/4″)
  • 1 1/2 cups of breadcrumbs
  • 2 egg whites
  • salt and pepper

Preheat your oven to 450*.

Slice your zucchinis as thin as you want.  The thinner they are, the crispier they will be.  So if you like your chips extra crispy, make them smaller!  I cut them so they looked like this-

Prepare two bowls.  In one bowl whisk your egg whites until bubbles form.  In the other bowl, dump your breadcrumbs and season with salt and pepper.

Next, dip your zucchini slice into the egg whites and gently shake off the excess liquid.

Then, coat the chip in breadcrumbs.  Shake off the excess.

Place on a baking pan (sprayed with cooking spray/oil) and repeat with the remainder of the chips.

Place in the oven for 6 minutes.  Take them out and flip all of them over.  This will make them extra crispy!

Place them back in the oven for another 6 minutes or until golden brown.

And that is it!  You have a nice snack that will pair well with dips, go on a salad, or even just as a side dish.
